Chuck Shin is the owner of aptly named Chuck's Hop Shop. I don't know anything about him, and I don't want to. I haven't heard any allegations of abuse or terrible politics, like the owner of Burb's (i miss your cheap delicious burgers, but man the owner was a weirdo). Where is Josh Henderson anyway? No one can seem to find him?!

I'm just going to assume Chuck is a stand up guy, because his beer stores are incredible, and thus he must be a great dude. Seriously. I hear a lot about best beer stores / bottleshops in Seattle. People often bring up places like Bottleworks in Wallingford, which, do NOT get me wrong, Bottleworks is AWESOME, but Chuck's has SO much more on draft, and SO much more cooler space. It's literally a craft brew oasis. There's a TON of local stuff, but even more just overall great stuff.
I'll admit I'm a transplant, like 90% of us in Seattle these days. I can even sometimes get Ever Grain Brewing, my favorite local brewery from back home in Pennsylvania.
Location wise, there are actually THREE locations of Chuck's Hop Shop! If one is out of your reach, surely another one will be near! When I used to live in Roosevelt, I went to the Greenwood location fairly often. It was a pretty easy 20-25 minute bus ride on the 45. Now that I live more downtown-ish, I go to the Central District location, which is ALSO easily reachable by the 2 bus. The 2 literally stops like half a block away from the CD Chucks. I'm all about that.

The 3rd location is in the Seward Park neighborhood, only a hop and a skip from Seward Park itself. I haven't been to Seward Park in a hot minute, but the next time I go, I'll probably check out Seward Chuck's afterwards! The Seward Park location does officially have food on site too, which is Chuck's Burger Press. I'll update back when I try it, because I'm a sucker for smash burgers. Speaking of, I gotta get over to Rain City Burgers up in Roosevelt before it's demolished and turned into more apartments. More apartments = Good. Demolishing Rain City Burgers = Bad. I hope they have a relocation game plan. Where will we get our Chicken Masala Burger??
The other Chuck's locations allow outside food, since they don't officially have onsite food, but they do have self-proclaimed 'crappy' snacks, including Chuck's famous Crappy Hot Dog. If that doesn't meet your fancy, they do often have food truck rotations at CD and Greenwood which can be found on their website.

This last time we went to CD Chuck's we were expecting Tat's, but their truck broke down, so we ordered Seattle's well-known Tacos Chukis from their CD location. It's only like 2 blocks away. It was fine. There's actually a taco truck that was only like ONE block away near a gas station. That place apparently has pretty great ratings, so maybe I'll try that next time if I'm desperate. People were reallllly banking on Tat's Truck too. We were sitting outside and saw SEVERAL groups of people turn around when they saw Tat's wasn't there that night. Poor Chuck's.

As far as Greenwood, if the truck doesn't show up, I've seen dudes strongarm carrying like 5 boxes of Pagliacci pizza from two blocks away. Food is never far from Chucks it seems.
They are family friendly, and do allow dogs. I've heard screaming children and barking dogs in the same instance at Chuck's before. If you bring a kid. there is...eh, who am I kidding, ice cream is for everyone. They have ice cream! I can't vouch for Seward Park, but CD and Greenwood both have an Ice Cream counter as well! Ice Cream and Beer? Chuck is a genius.

Chuck's is a great place, no matter the season. If I know I want good beer, but have no particular place or brewery in mind, Chuck's is usually the answer. There's indoor and outdoor seating. Dozens and dozens on tap, and like...thousands to take home. I wonder if Chuck would be open to funding liver transplant operations? I'm a little too obsessed. Just wait until Fresh Hop season....ow my abdomen. Maybe Bottleworks/Brouwers (RIP) were on to something with their HardLiver celebration??
